Soups are so easy and delicious during the colder months. This broccoli cheddar soup will give you all of the fall feels! It's savory, creamy, and warms the soul. This is one of our staples for fall soups and I'm sure it will become one of yours too! Check out the full recipe below!
Ingredients:
- 4 cups fresh or frozen broccoli, chopped into small fleurettes
- 2 medium sweet potatoes, peeled
- 1 small white onion, chopped
- 1/2 tbsp garlic, minced
- 1 and 1/2 tbsp olive oil
- 2 tbsp all purpose flour
-1 cup unsweetened original almond milk
- 1/4 cup nutritional yeast
-1 tbsp vegetable better than bullion
- salt and pepper, to taste
Directions:
Start by putting your chopped broccoli into a bowl (I use a glass bowl for this). Pour over boiling water, making sure to cover all of the broccoli, and let sit. This is done to soften the broccoli a bit before adding to the soup.
Next, poke holes in your sweet potatoes with a fork and place in the microwave for 5 minutes. Flip and microwave for another 3 minutes. Add additional time until the potatoes are cooked through but be careful, the potatoes will be HOT! Feel free to boil the potatoes instead if you'd like; we just like the convenience of less dishes and time with the microwave!
In a large pot on the stove, sauté your onion and garlic in olive oil over medium-high heat until onions are translucent (about 5 or so minutes).
Once onions are translucent, add in a dash of salt and pepper.
Next, add in your flour to the pot and stir. Make sure the flour doesn't burn but gets to a golden brown color. This happens quickly!
Add in 1/2 cup almond milk once flour is golden brown. Continue stirring constantly and add in another 1/2 cup almond milk when first 1/2 cup is thickened. Once the second 1/2 cup is thickened, add in 1/2 cup of water. Once that is thickened, add in another 1/2 cup of water. This all happens quickly so it would be helpful to have your almond milk and water prepped and measured before hand!
Now you can relax and add in the nutritional yeast and the better than bullion and mix together! Continue stirring until fairly thickened a bit.
Add in 2 more cups of water and stir. Bring to a boil and then let it boil for about 5 minutes.
Add in your cooked sweet potatoes (chopped up a bit) and your soup mix to a blender and blend until it reaches a smooth consistency. This is really a game changer in terms of creamy soups! Blending adds so much smoothness to one dish it's unreal! This whole mixture fits well in our ninja blender, but you can do half of it at a time if you have a smaller blender.
Once smooth, pour your soup back into the pot along with your softened broccoli.
Bring the soup to a boil and then let it simmer for about 5 minutes. Taste the soup and add in a bit more salt and/or pepper if you'd like!
Your soup is officially done and it's time to enjoy it! We like to pair this soup with a nice side of garlic bread!
