Tofu Fajitas

I love Mexican food. There's nothing better than a nice spicy burrito or some hot melty nachos BUT one thing I have been neglecting are fajitas! I don't know how they slipped my mind for so long! We have finally made some and they are so delicious! It really is a nice change from our traditional Mexican recipes and it will for sure be something we make again and again. Check out our recipe below for mouth-watering plant-based fajitas!


Ingredients:

- 1 block firm tofu

- Taco seasoning

- Olive oil (spray and/or regular)

- 2 bell peppers, sliced (we used one yellow and one red)

- 1 medium red onion, sliced

- 1 tsp diced chipotle peppers

- 1/2 tsp vegetable better than bullion

- Salt and pepper, to taste


Directions:

  1. Start by pressing your block of tofu slightly to get some of the water out. This isn't extremely necessary, it just helps to get a better texture for the tofu later on. Cut the tofu in to long thin strips.

  2. Sprinkle the strips of tofu in taco seasoning just enough for a thin coat. Spray the tofu and an air fryer basket with olive oil to prevent sticking. Cook in the air fryer at 400 degrees for 20-30 minutes depending on your air fryer. Mix the tofu about every 5 minutes or so until it is a nice golden brown and a texture of your liking. The longer you keep it in the air fryer, the dryer and more chewy the tofu will be.

  3. In a large pan on the stove, add in 1 tbsp olive oil, onion, bell pepper, salt and pepper and sauté over medium to high heat. Do this until the veggies are nice and caramelized, this should take about 5-7 minutes.

  4. Add in the diced chipotles, better than bullion, and 1 and 1/2 cups of water to the pan. Bring this to a boil, reduce the heat and simmer until the water is gone and has turned into a glaze. Make sure to stir occasionally.

  5. Once your veggies are nice and cooked, then you can add in your tofu! Stir everything together and enjoy! We like to eat these on small tortillas and as a fajita bowl with this mixture served over Spanish rice!
