Creamy Tomato Basil Soup

It's coming to the end of summer so you know what that means! Lots and lots of tomatoes! If you can your own tomato juice, then that is perfect for this recipe! This is literally the easiest creamy soup recipe I've ever made! The flavor is quite amazing and is right up there in my top five recipes on my blog! Maybe even the top recipe! It's hard to say because they're all so good, but if you only try one of my recipes, make it be this one! It's only 5 ingredients but SO comforting, full of flavor, and pairs so well with a grilled cheese.


Ingredients:

  • 32 oz. tomato juice

  • 1 Tbsp all-purpose flour

  • 1 Tbsp olive oil

  • 1 cup unsweetened original almond milk

  • Handful fresh basil, chopped

  • Salt and pepper, to taste


Directions:

  1. In a pot on the stove, heat the olive oil over high heat.

  2. Next, add in the flour to make a roux. Stir the flour and oil together until it reaches a nice golden brown color. This is important to cook out the flour flavor!

  3. Add in the almond milk and stir together until it is thickened.

  4. Now, add in the tomato juice and basil. Let the soup simmer until hot and is a thickness that you desire! Season with salt and pepper to taste.

  5. Pair the soup with a hot grilled cheese sandwich or a buttery piece of toast and you have yourself a delicious meal!
