Potato salad is a staple summertime dish in my house! This recipe is full of citrus and herbs! You can enjoy this as a side to your main meal or as a mid-afternoon snack. It is so fresh and delicious that it will leave you wanting more! One tip for this recipe is that the dressing used for the potatoes can also be used as a citrus/lemony salad dressing! So this is really a 2-in-1 recipe. You'll have to be sure to check this one out for yourself!
Ingredients:
-6 to 10 medium size red potatoes, cubed (any kind will work but red are my favorite)
-1/2 medium size onion, chopped (I used white but you can use red for more color!)
-1/4 cup green onion, chopped
-3 tbsp olive oil
-1 tsp red wine vinegar
-1 tsp apple cider vinegar
-4 tsp spicy brown mustard
-1/4 tsp minced garlic
-Juice from 1/2 lemon
-1/2 sprig of fresh dill, chopped
-1/2 tsp parsley (I used dry, but fresh would be better!)
-1/2 tsp basil (I used dry, but fresh would be better!)
*Use a 1:1:1 ratio of dill, parsley, and basil if using all fresh or all dry
-1/4 tsp black pepper
-Salt
Directions:
1. Place the cubed potatoes in a kettle with heavily salted water and boil until potatoes are fork tender.
2. Drain the potatoes and set them aside.
3. To make the dressing, add in the olive oil, red wine vinegar, apple cider vinegar, spicy brown mustard, lemon juice, dill, parsley, basil, and black pepper to a mason jar or a bowl and mix it all together.
4. In a large bowl, add in the potatoes, onion, green onion, and dressing. Toss together and then place in the fridge to let it cool.
