I have been craving a good creamy alfredo for a really long time and we finally got around to making it! Ever since I went vegan I always had it in my head that I couldn't have alfredo because I thought there was no way to make it vegan. Well times sure have changed! I wouldn't believe you if you served this to me for dinner and then proceeded to tell me it was vegan. You could fool anybody with this basic vegan alfredo recipe, so be sure to try it out for yourself!
Servings: 4
Ingredients:
-4 servings of pasta (We used spaghetti, but any will work just fine. I actually prefer bow-tie or fettuccine.)
-3 cups original unsweetened almond milk
-1/2 cup all-purpose flour
-1/2 medium white onion, chopped
-2 tsp minced garlic (about 2 cloves)
-3 tbsp vegan butter
-3 tbsp olive oil
-1 and 1/2 tbsp nutritional yeast (optional)
-Italian seasoning to taste
-Salt and pepper to taste
Directions:
1. Start cooking the pasta in boiling water
2. In a separate sauce pan over medium-high heat, melt the butter
3. After butter is melted, add in the garlic and onion and saute until onions are translucent
4. Next, reduce heat to medium and add in the olive oil to the pan
5. Then add in the flour and make sure the flour is fully saturated. It will be like a paste. Add more oil a little at a time if you need
6. Stir constantly until the mixture gets slightly golden brown in color
7. Now, add in the almond milk 1/2 cup at a time and folding in to the flour mixture
8. Once all of the milk is added, reduce heat to low and keep stirring. Add in your nutritional yeast, Italian seasoning, salt, and pepper to taste. You will need to add quite a bit of salt for the flavor to come through
9. When the pasta is done, reserve 1/2 cup of the pasta water and then drain
10. To the pasta, add in the reserved pasta water and the alfredo sauce and mix!
11. Once it is fully mixed, it is time to enjoy!
*You can top the dish with additional Italian seasoning and nutritional yeast. Enjoy with your favorite vegan garlic bread/bread sticks!
