Serving size: 2 (can easily double for 4)
Ingredients:
2 medium sweet potatoes
1 cup dry lentils
1 cup packaged coleslaw mix
Vegan butter
Lentil BBQ Sauce:
1/3 cup BBQ sauce
1 Tbsp hot sauce
1 tsp hoisin sauce (optional)
Coleslaw Sauce:
2 Tbsp creamy garlic almond dip (can be found at Walmart)
1 Tbsp BBQ sauce
1 tsp olive oil
Directions:
1. Stir together coleslaw mix and coleslaw sauce in a bowl and let sit
2. Cook lentils according to package directions
3. Mix lentils and lentil BBQ sauce together
4. Microwave sweet potatoes on high for 6 minutes, turning halfway through (until fork tender) *Be sure to poke holes in potatoes before microwaving
5. Cut sweet potatoes in half and assemble with vegan butter, lentils, then coleslaw
*Optional: Add additional BBQ and/or hot sauce on top
