My favorite chocolate chip cookies growing up were always from my grandma's recipe. I wanted to recreate them but in a vegan version and let me tell you, these are just as good or better than the original! Don't let the ingredients scare you away, they are delicious! Enjoy them warm and with a nice cold glass of plant based milk!
Ingredients:
-1 and 1/4 cup refined coconut oil
-3/4 cup sugar
- 1 and 1/2 cup brown sugar (lightly packed)
- 1 and 1/2 tsp vanilla
- Aquafaba from one can of chickpeas
- 4 cups and 6 tbsp flour
- 1 and 1/2 tsp baking soda
- 1 tsp salt
- Chocolate chips (as many or as few as you'd like!)
Directions:
Bring the aquafaba to a boil in a sauce pan and let boil for about 5 minutes. Let cool.
In a bowl, cream together the aquafaba, coconut oil, sugar, brown sugar, and vanilla. (This is best done by hand or on a very low setting with a mixer. Do not whip this mixture together, just make sure everything is mixed)
In a separate bowl, mix together the dry ingredients.
Now, add the dry ingredients to the creamed mixture and mix well.
Finally, add in your chocolate chips.
Place dollops of cookie dough on an ungreased baking sheet.
Bake for about 15 minutes, or until golden brown, at 350 degrees.
