Mac and cheese is just one of those go-to comfort foods that everyone loves. I have always loved mac and cheese and I always will, that's for sure! The last time I had mac and cheese I bought a box at the store and it just didn't taste that good. There was something off about the flavor, so that inspired me to create my own recipe! This tastes just as delicious as regular homemade mac and cheese, but without all of the animal products! Its a win-win and you can't go wrong!
Servings: 4
Ingredients:
-1 lb (16 oz) of pasta, your favorite shape
-1/2 cup all purpose flour
-1 tsp better than bouillon (to make 1 cup of broth)
-2 cups unsweetened original almond milk
-1 cup Daiya shredded cheddar cheese
-2 tbsp vegan butter
-3 tbsp olive oil
-1 tbsp nutritional yeast
-1/8 tsp onion powder
-1/8 tsp garlic powder
-salt and pepper, to taste
Directions:
1. Start by boiling the pasta in a large kettle on the stove, seasoning the water with a pinch of salt
2. To make the roux, place a sauce pan on the stove over medium heat and melt the butter
3. Then, add in the olive oil and flour making sure all of the flour is saturated.
4. Stir this mixture constantly until it reaches a very slight golden color.
5. Add in 1/2 cup of the better than bouillon broth and stir together. Add in the second 1/2 cup of the broth once the first is fully incorporated. Continue stirring the whole time and you should also see the mixture bubbling slightly.
6. Once the broth is fully incorporated, add in the almond milk 1/2 cup at a time and continue stirring the mixture together.
7. Once all of the liquid is added, add in the cheese, nutritional yeast, salt, and pepper to taste.
8. When the pasta is al dente, drain and add in the cheese sauce.
9. Stir everything together and enjoy!
*I like to top my mac and cheese with bread crumbs and additional cheese!
