Pasta Primavera

Spring is the perfect time to add fresh veggies to your pasta! In fact, the word "primavera" actually means spring time in Italian! We enjoyed this recipe after a nice long hike through the winding trails of the wilderness. It is so fresh and so delicious, you have to try this one!



Servings: 4 (unless you're super hungry, then probably only 2)

Ingredients:

-4 servings pasta (you can use any shape you like)

-1 cup vegetable broth

-1 cup unsweetened original almond milk

-1/2 zucchini, sliced

-1/2 red onion, sliced

-Handful of asparagus (about 7), cut in thirds

-1/2 cup cherry tomatoes, sliced

-1/4 cup mushrooms, chopped

-1 tsp minced garlic (about 1 clove)

-2 tbsp all-purpose flour

-2 tbsp olive oil

-1/4 tsp Italian seasoning or a little more to taste

-Salt and pepper, to taste

-Optional: A squeeze of lemon juice (we didn't have any on hand, but it would be worth adding to kick it up a notch!)


Directions:

1. Start by boiling water and cooking your pasta. The pasta will most likely be done cooking before you need it, but you can just drain it and set aside until the sauce is done!

2. Next, start cooking the roux. Do this by adding the olive oil and flour to a sauce pan on the stove over medium heat. Mix this all together and keep stirring until it gets to be a golden color. This will make sure to cook out all of the flour taste!

3. Once your mixture reaches this golden color, add in 1/2 cup of the almond milk. Mix until the sauce thickens slightly and it starts to bubble. Simmer for about 30 seconds and then add in the second 1/2 cup of almond milk.

4. Do that same thing for each 1/2 cup of vegetable broth except it won't get as thick this time. Still make sure the sauce simmers though!

5. Once all of the liquid has been added, then add in all of your seasonings, garlic, and veggies (zucchini, onion, asparagus, mushrooms, and cherry tomatoes-leave out a couple slices of tomatoes to use as a topping if you wish!).

6. Let this simmer over medium heat for quite awhile. You want to cook the veggies thoroughly and reduce the sauce so it is a little bit thicker.

7. Once the sauce has reduced to a thickness you desire, then add it in to the pasta and stir everything together.

8. Enjoy!
