Philly "Cheesesteak"

This is one of the easiest and quickest recipes I've posted. It literally took us about 15 minutes from start to finish and it is only 6 ingredients! It's a nice light recipe for a quick dinner or an easy summertime lunch! I've said it before, and I'll say it again, I am not the biggest fan of mushrooms. But I really really enjoyed this sandwich and I didn't mind the texture of the mushrooms. Everything works together and the flavor is the biggest part of this recipe. Check out the recipe below!


Ingredients:

  • 1 large portabella mushroom, sliced

  • 1 medium red onion, sliced

  • 2 bell peppers, sliced (We used yellow and green but feel free to use your favorite colors)

  • Handful of plant based shredded mozzarella cheese (Our favorite is Daiya)

  • 2 tsp olive oil

  • Seasonings: seasoned salt, steak seasoning, black pepper (to taste)

  • Hoagie buns

Directions:

  1. Once all of your veggies are prepped and sliced, heat the olive oil in a pan on the stove over high heat.

  2. Add in all of your veggies (Mushroom, onion, bell peppers) and seasonings and saute for about 10 minutes stirring almost constantly to prevent burning/sticking. If you don't want to stir constantly, either add more olive oil or reduce heat to medium.

  3. Once veggies are cooked through, assemble sandwich by placing cooked veggies on the bun and top with cheese!

  4. Enjoy!
