Plant Based "BLT"

It's beginning to feel warmer outside so that means fresh fruits and vegetables and what better thing to do than make a plant based BLT? These were one of my favorite lunches to have during the summer growing up. There's just something about it that makes me so happy inside. I know that tofu isn't the same as bacon, but this is a really great alternative for a plant based option!


Servings: 2 (can easily double recipe for 4)

Ingredients:

-1/2 block extra firm tofu

-2 tbsp sweet BBQ sauce

-1 tbsp olive oil

-3/4 tsp seasoned salt

-1/8 tsp liquid smoke (optional but makes it taste more like bacon)

-Toast

-Creamy Garlic Almond Dip (can be found at Walmart, you could also substitute this for vegan mayo)

-Red onion

-Tomato

-Lettuce

-Avocado


Directions:

1. Press out as much water as you can from the tofu.

2. Cut the tofu in to the thinnest slices as you can without it breaking or crumbling and then lay them out on a cutting board. We were able to get 10-12 slices.

3. Prepare your sauce by mixing together the BBQ sauce, olive oil, seasoned salt, and liquid smoke.

4. Brush the sauce on all sides of the tofu slices. You should use all of the sauce.

5. Now it's time to make some tofu bacon! Place the tofu slices in a pan on the stove over low-medium heat making sure they are in a single layer. You may need to cook in a couple of batches depending on how large your pan is.

6. Let the tofu cook for about 15 minutes, flipping half-way through. We are cooking over low heat because we want to get as much of the water out of the tofu as possible in this step.

7. Turn up the heat to high and let tofu cook on both sides for about 30 seconds to 1 minute to achieve a nice dark brown color.

8. Remove the tofu slices from the pan and assemble your BLT!

9. Spread a thin layer of the Garlic Dip on both slices of toast (you could use vegan mayo instead), layer on your tofu bacon slices, then add some lettuce, tomato, avocado, and onion and you're good to go!
