What's better than cookies for breakfast? I'll wait. That's right, nothing! Especially when they are healthy and full of protein! This recipe will take you less than 20 minutes and you'll have breakfast for a couple of days! It's perfect for those bananas sitting on your counter that are more brown than you'd like and about to go bad. Don't throw them out, make some cookies! They are simple and a great alternative to your every day oatmeal. Check out the recipe below!
Servings: makes 10-12 cookies
Ingredients:
-1 cup rolled oats
-2 very ripe bananas
-1 tbsp chia seeds
-1 tbsp peanut butter (or any nut butter you prefer)
-1 tbsp agave (or any sweetener you prefer, this is optional)
-Optional add-ins: vegan chocolate chips, dried fruit, vegan protein powder, seeds like hemp or flax, nuts, basically anything you wish!
Directions:
1. Add in all ingredients to a mixing bowl and mix together making sure to mush the bananas. I've found the easiest way to mix this is by using your hands, but anything will work!
2. Spray a baking sheet lightly with oil and place the mixture on it in cookie shapes. *These cookies will not spread like normal cookies so you can place them as close together as you want and make sure to press them down! They will stay in the shape that you place on the baking sheet!
3. Bake at 350 degrees for 10-15 minutes. They will be firm to the touch and golden brown on the bottom when they are done!
