Vegan Homemade Pasta

This recipe is great for when you have extra time on your hands. It does take some effort to make this when it is so easy to just buy pasta at the store, but it will be so rewarding in the end! You can use the pasta in soups and other pasta dishes like alfredo, spaghetti, or even ravioli! These noodles are perfect for my Chickpea Noodle Soup. You can be as creative or not creative as you want! Don't be scared, just follow the recipe and you'll have delicious tasting homemade pasta!


Ingredients:

-2 cups and 1/4 cup all-purpose flour

-Aquafaba from 2 cans of chickpeas (this is the juice the chickpeas are in)

-Salt, just a pinch


Directions:

1. First we are going to start by reducing down the aquafaba. To do this, place it in a pan on the stove over medium-high heat. Let it boil until it reaches about 1 cup in volume. Don't worry if it is less than 1 cup, we are only going to use 3/4 cup of it. After it has boiled, let it cool for about 5 minutes.

2. Place the 2 cups of flour, mixed with a pinch of salt in a large bowl and create a well in the middle. This is where we are going to pour in the reduced aquafaba.

3. Once the aquafaba has cooled, pour in 3/4 cup of it in to the well in the flour.

4. Starting in the middle, whisk the aquafaba with a fork adding in a little bit of flour at a time.

5. Once this gets difficult with the fork, move to using your hands and incorporate the flour in to the dough until you have added in all of the flour.

6. On a clean counter top, remove the ball of dough and pour the 1/4 cup of flour over it working some of the flour in to the dough and using the rest to cover the counter top. You don't want the dough to stick!

7. Cut the dough in to 4 sections, coat it in flour, and then begin to roll it out with a rolling pin or a cup. Roll it as thin as you can without breaking it. The dough will puff up when you cook it!

8. Once you have rolled out the dough, cut it in to your desired shape using a pasta cutter, a pizza cutter, or even just a knife. I cut my pasta a little wider because I wanted to use it in a vegan version of chicken noodle soup, but you can do what ever you prefer!

9. Bring water to a boil in a large kettle on the stove.

10. Once water is boiling, place the pasta in and stir occasionally. Cook the pasta until it rises to the top and then leave in for 30 seconds to 1 minute longer if you are going to be cooking it again in a soup, or leave it in for 1 to 2 minutes longer, until it is al dente, if you are going to use it in a pasta dish.
