Who doesn't love a big bowl of fried rice? I know I do! This recipe is one of our staples and I'm not even going to try to hide the fact that we eat it as a meal at least once a week. You could eat it like we do as a meal, or you could have it as a side dish to your main dinner! The options are endless with this recipe!
Ingredients:
-1 package firm tofu
-2 cups brown rice cooked according to package directions
-1/2 medium white onion, chopped
-1 large carrot, chopped
-3/4 cup peas, fresh or frozen
-1 Tbsp Stir-fry sauce
-1-2 Tbsp Hoisin sauce
-1 Tbsp Soy sauce
-1 Tbsp Coconut aminos (optional)
-1 Tbsp minced garlic (about 3 cloves)
-2 Tbsp olive oil
-Asian seasoning, to taste
-Pepper, to taste
Directions:
1. In a Wok, heat olive oil over high heat
2. Add in the garlic, onion, carrots, and peas and saute until browned
3. Add in the soy sauce, hoisin sauce, stir-fry sauce, coconut aminos, Asian seasoning, and pepper and stir
4. Add in the tofu, breaking it up with your hands as you add it
5. Saute until tofu is slightly browned
6. Reduce heat to medium and add in the cooked rice. Mix everything together
7. Take a taste and add more sauces/spices to your liking! I personally enjoy more of the coconut aminos flavor
8. Let the rice brown slightly
9. Enjoy!
