Fiesta Tacos (Cinco de Mayo)

We went ALL out for this one! Two different homemade salsas, tofu, beans, potatoes, it's all in here! Cinco de Mayo looks a little different this year, so this recipe is perfect for your own little celebration! You can still be festive with these fresh but so so so delicious tacos! These are seriously the best tacos I've ever had and my boyfriend agrees. I've broken down this recipe into ingredients and directions for the main fillings, each salsa, and the tortillas so you can mix and match any of the recipes you wish! I hope that you enjoy!



Main filling ingredients:

-1 block firm tofu, diced

-1 can black beans

-1 medium sweet potato, chopped

-Olive oil

-Seasonings: taco seasoning, garlic powder, onion powder, salt, pepper


Main filling directions:

1. Cook the sweet potatoes in an air fryer following my sweet potato fries recipe.

2. In a pan on the stove, heat the can of black beans over medium heat. Add in 1/4 tsp each onion powder and garlic powder. Add in salt and pepper to taste.

3. Let the beans simmer until they get soft and then mash them slightly. This makes them extra creamy and delicious!

4. In a separate, shallow but large, pan on the stove add in a dash of olive oil and the diced tofu. Sprinkle the tofu with taco seasoning, onion powder, and garlic powder to taste.

5. Cook the tofu on medium-high heat until they get nice and golden brown. Stir them occasionally, but the longer you let them sit in between stirring the more golden brown they will get. Patience is key!

*All of these are the basis for the main filling of the tacos!



Corn salsa ingredients:

-1 cup corn

-Dash of olive oil

-3/4 cup tomatoes, diced

-1/4 red onion, chopped

-1/4 jalapeno

-1 tsp garlic, minced (about 1 clove)

-Sprinkle of cilantro

-Juice of 1/2 lime

-Salt, to taste


Corn salsa directions:

1. First we are going to roast the corn. To do this, heat just a dash of olive oil in a pan on the stove over high heat.

2. Add in the corn and stir very occasionally. The longer you leave it sit, the quicker and more brown it will get!

3. Once the corn is fairly blackened, let it cool and then all all of the other ingredients.

4. Let the salsa sit in the fridge for at least 1 hour to get it cold and let all of the flavors marinate!


Spicy mango relish ingredients:

-1 mango, diced finely

-1 can Rotel (diced tomatoes and green chilies - 10 oz.)

-1 jalapeno, chopped (remove seeds if you don't want it as spicy)

-1/2 tbsp cilantro, chopped

-1 tbsp water


Spicy mango relish directions:

1. In a sauce pan, add in the mango and a splash of water (about 1 tbsp).

2. Heat this on the stove over medium heat and simmer until it gets reduced. Be sure to stir occasionally.

3. Reduce heat to low and add in the jalapenos. Simmer for about 3 minutes.

4. Add in the Rotel and simmer for another 3 minutes (until the liquid is evaporated).

5. Remove from heat and let cool for about 5 minutes.

6. Add in the cilantro and then place in the fridge to cool for at least 1 hour.


Taco shells ingredients:

-White corn tortillas (taco size, 2 or 3 per person)

-Olive oil

-Dash of salt


Taco shells directions:

1. Brush or spray both sides of the tortillas very lightly with olive oil.

2. Sprinkle salt on both sides of the tortilla.

3. Place the tortilla in a pan over medium-high heat.

4. Let it cook until golden brown and then flip to the other side and let it get golden brown as well. This will happen fairly quickly! If it is too quick for you, then reduce the heat slightly and they will take a bit longer to cook on each side.


Now for the creative part!

-Fill your taco shells with the tofu, beans, and sweet potatoes.

-Next, you can add which ever toppings you desire! We added the corn salsa on one of ours, spicy mango relish on another one, and our favorite store bought salsa on another. We also added additional red onion, fresh cilantro, and lime juice on top! Do whatever your heart desires, but I will say that the corn salsa is absolutely to die for!!
