This recipe is great if you're looking for that steakhouse flavor but don't want to eat a burger. As always, this is vegan and so delicious! We've made this twice already in 2 days it's that good. Perfect for lunch or dinner, this quick recipe is good for the whole family! You can never go wrong with a good quesadilla!
Servings: 2
Ingredients:
-1 medium sweet potato, cubed
-1/2 can black beans, drained
-4 tortillas, 8"
-1/2 cup Daiya mozzarella cheese
-Fresh Cravings Smokehouse Almond Dip (can be found at Walmart)
-Olive oil
-Salt
-Montreal steak seasoning
Directions:
1. Cook the sweet potatoes following my sweet potato fries recipe
2. Prepare the tortillas by spraying or brushing a very light coating of olive oil on one side of each of them and adding a dash of salt
3. On one tortilla, spread a thin layer of the smokehouse almond dip on the opposite side of the olive oil and salt
4. Place the tortilla with the dip on it, with the olive oil side down, in a pan over medium heat
5. Assemble the quesadilla by layering on a sprinkle of the cheese, then 1/2 of the cooked sweet potatoes, followed by 1/2 of the black beans. Add a dash of Montreal steak seasoning, then another sprinkle of cheese, and finally top it with the second tortilla with the olive oil side up
6. Squish down the quesadilla as much as you can
7. Once the bottom tortilla is slightly browned, flip the quesadilla carefully
8. Let the other side brown and then you're good to go!
9. Repeat this process with the next tortilla
10. Cut the quesadillas and top with salsa, hot sauce, more smokehouse dip, or BBQ sauce
11. Enjoy!
