Veggie and Tofu Scramble

Do you have a bunch of random veggies sitting in your fridge just waiting to be used? Well don't wait any longer because this breakfast/brunch recipe is just what you need! We used an assortment of spring veggies but you can use anything that you would like. We usually have some sort of tofu scramble for breakfast on the weekends, but this was a nice twist! Be sure to check out the recipe below!


Servings: 2

Ingredients:

-1 package firm tofu

-1 medium size sweet potato, chopped

-1/4 medium size red onion, sliced

-1/4 of a zucchini, chopped

-1/2 green bell pepper, chopped

-Small handful of asparagus, cut in thirds

-Handful of mushrooms, chopped

-1 tbsp garlic, minced (about 3 cloves)

-2 tsp olive oil

-Turmeric, for color

-Salt and pepper, to taste


Directions:

1. We are going to start this recipe off by cooking all of our veggies. To do this, heat the olive oil over medium heat in a decently sized pan on the stove.

2. Add in the garlic, sweet potatoes, and salt and pepper and let it cook for about 5 minutes.

3. After the 5 minutes, add just a thin layer of water to the bottom of the pan and cover. This will steam the potatoes and help them cook faster. Leave the cover on for another 5-7 minutes.

4. Remove the cover and increase the heat to medium-high to evaporate some of the water.

5. Add in the rest of the veggies (onion, zucchini, bell pepper, asparagus, and mushrooms), cover the pan, and let cook for about 5 minutes, stirring occasionally.

6. The veggies should be almost cooked through at this point, so remove the cover and turn up the heat to evaporate any of the remaining water and to add a slight brown color to the veggies. This gives them a lot of flavor!

7. Now we are going to cook the tofu. In a separate pan, crumble the tofu with your hands and add in the seasonings (turmeric, salt, and pepper). Add enough turmeric to make the tofu look pretty yellow, like eggs. Add enough salt and pepper to your liking.

8. Heat the tofu over medium-high heat until hot all the way through.

9. The veggies should be done at this point, so now it is time to serve it up!

10. Place a bed of veggies on a plate and then top with the tofu!

11. Enjoy!

*We like to enjoy this dish with a slice of sourdough toast with vegan butter!
